Gluten allows wheat tortillas to be rolled thinner than can corn ones.

LOL. As much as I love the stuff, I try to eat much better than that to keep my weight down. Persnally, I could live on Taco Bell.

Hi All,

Craven makes an excellent point about the type of grain making a difference,..but I do think that would have more to do with the thickness than the size. I have a sneaking suspicion that the answer lies in the fact that it's just another example of we americans getting our hands on something, and changing it to suit our needs and tastes, and then being able to mass-produce it at a low cost.

Hers's a link to some interesting tortilla info:

Aha! Makes sense that they used corn tortillas rather than wheat flour ones. Corn is/was huge in Mexico.

Completely unrelated to tortillas, I love your new sig files, Jerry!

And related to tortillas, I porefer corn ones too. But Brian likes flour ones, except in soup. He loves my tortilla soup! So we usually have both kinds on hand.

Wheat tortillas have always been bigger than corn tortillas. Two probable reasons:

1) The tecnique to handmake wheat tortillas is similar to the tecnique to make hotcakes; the tecnique to handmake corn tortillas is to grab the mass, make a ball and slap the hands several times. It's a question of time and effort.

2) Wheat tortillas come from richer parts of the country. More grain per person is available: hence, wheat tortillas can be bigger with no one being left with too few.
