Using wood glue on dark woods

When using wood glue on dark woods, or wood to be stained dark, tint the
glue to make it less noticeable by adding a small amount of universal
colorant (available at most paint stores). As long as the pigment is
water-based and can be mixed without adding more than 5% water to glue, it won't affect the performance.

Why not just use hide glue, it has a dark color to begin with?

Elmer's, and others, I imagine, make wood glue especially for dark woods nowadays.
