Regression analysis?

I need to perform a regression analysis where the dependent variable is quantitative and there are numerous qualitative independent variables. These could be made into binary variables if that would help; for instance, "day of the week" could be turned into 5 binary variables for each day of the work week.

I'm wondering if anyone could suggest a statistical method to use and possibly even some software to do the grunt work. I took statistics many years ago and I remember very little but I'm a quick study.

SAS, JMP or Minitab could all do this with minimal effort. It would be a pain to do by hand.
