On many account , i regarded this city with affectionate veneration. There were more than local attractions to render it interesting. There were recollections of those who ceased in the interval to be denizens in this world. "These could not but breathe sadness over the noble edifices that recalled men, conversations and convivialities which, however long departed, shadowed upon the mind its own destiny." the meaning of the sentence enclosed in quotation mark, in particular ,what does the word "these" refer to ?

These refers to - "denizens in this world", the deceased.
He's saying the buildings in this town are haunted with the memories of people and past conversations and they, the buildings must realize that they too will die, or one day be dust as well.
