bilateral upper extremity transplant = the transplant in which two upper limbs have been transplanted?

Context:

The world’s firstfacial transplantation was performed in 2005 in Amiens,
France. The patient was a 38-year-old woman who sustained a severe
facial soft tissue avulsion injury involving the lips, nose, and cheek from
a dog bite. The early results from the procedure were remarkable and the
world was presented with a medical breakthrough. Since then, 13 facial
transplantations have been performed worldwide in patients with defects
from trauma or tumors. Outcomes from the first few reported cases have
demonstrated that facial allograft transplantation (FAT) has the potential
to restore facial function and esthetics to an extent that has been
unattainable with conventional reconstructive techniques. Two of the
transplanted patients have died, however. A severely burned male patient
who received a simultaneous facial and bilateral upper extremity transplant died of bacterialinfection1monthaftertheprocedure.Recently,the
world’ssecondfacialtransplantpatientdiedofunknowncausesinChina.
In addition to these tragic deaths, minor complications, such as opportu-
nistic infections and steroid-induced diabetes mellitus, have been re-
ported. Despite the fact that long-term results of FAT are unknown and
the procedure is still rather experimental, there is an unparalleled
excitement about the new technique, giving hope to both reconstructive
surgeons and patients.

bilateral [both sides]

upper extremity [the upper portion of the body; my guess, not being a doctor, is that it's that area of the thorax that is below the neck to somewhere above the belly button.

Arms are upper extremities.

bilateral upper extremity transplants are usually referred to (other than in professional papers) as double arm transplants

If the author used, like you did here, the plural form "transplants", not the singular form "transplant," I would not have the question posted here.

It is done as one surgery.

You can't really expect medical professionals to be precise writers. Their specialty is medicine, not English. Some of them are terrific writers, others are not.

I spent a large part of my day discussing a coroner's report. Someone became ill, died, and then was buried in cement. The day listed as the date of the death was the day the police found the body. Because of the condition of the cement when the body was found as well as a couple of other details, I know that the person can't have died and been buried on the day the body was found.

Trying to explain to the coroner that the medical cause of death isn't precise enough - that the correct date of death matters - has been difficult. He doesn't think anything other than his medical knowledge is important.
