That's good, but not what I had in mind. However, it got me thinking about your problem. How about putting a horizontal line through a 7? I don't do that myself, so I didn't consider it. Anyway, there's something else I had in mind with my puzzle.

Cross the slash to make an X and get:
XXI - X = XI

VI + VIII = III
Add a horizontal bar over 'I + VIII' that is connected to the first V creating a radical (square root symbol). You get:
