Italian food only when is homemade, because in restaurants they use pork fat instead of vegetable oil.

Well, there is of course a lot of Italian which is done with "pork fat" - bruschette al lardo e rosmarino, canederli di fegat, cappone tartufato, coda alla vaccinara, falsomagro, minestra di pasta e borlotti, pasta e fagioli, polenta e bruscitt ... ... - but generally, olive oil is used (though restaurants may use a cheaper brand than you use at home).

I had a great dish of risotto with fish in Venice. It was so subtle yet satifying.

One of my very favorite dishes is a simple spaghetti with garlic, olive oil and basil . Absolute JOY!
