Does anyone know of any really good chinese cookbooks in English?

Heck, the only one I have was written by a Jewish woman, Nina Simonds. It's OK, but she's no Diana Kennedy (the Irish authority of Mexican cooking).

At one time I studied to be a sous chef and we were required to purchase "The Key to Chinese Cooking" by Irene Kuo. Something better might be on the market now, but it's a very good guide with authentic recipes - right down to using blood to thicken soups.

I know it's true in Boston's Chinatown. When we are with the Lovely
Bride's side of the family, we get menus written in Chinese. Obviously
they don't give those to the "Lo Fan".



My absolute favorite dish is the Lovely Bride's Lobster Cantonese.

I have a few recipes that my Army buds brought back from Korea. I love the (Pulgolgi Bulgolgi and a few other spellings) for grilled strips of marinated beef. I know the former is not Chinese.. and I love but I do love Szechuan and Hunan. Chinese cuisine......ohohohohohoh did I mention Thai?
