MOCK-POTATO CRACKER SALAD OR SANDWICH
An original recipe by BumbleBeeBoogie

1 saltine cracker stack, plain or cheese flavored, crushed (4 stacks to a box)
1 cup yellow onion, peeled and minced
1 small jar pimentos, drained and chopped
5 large eggs, hardboiled, shelled and chopped
1/2 cup sweet pickle relish
1 small can chopped black olives
1/2 small green pepper, seeded and finely chopped
2 celery ribs, thinly sliced and diced
1 pint salad dressing of choice, or mayonnaise, or sour cream

Combine and blend well. Store in a covered container in the refrigerator until ready to use.

Spread onto bread as a sandwich, or along with your favorite meat or tuna.

May also be served as a mock-potato salad.
