MUD HENS BARS

1 cup sweet butter
1 cup white granulated sugar
1 large egg
2 large eggs, separated
1 teaspoon vanilla extract
1 cups white all purpose flour
1 teaspoon double action baking powder
1 teaspoon salt
1 cup pecans, chopped
1 cup granulated brown sugar, packed
In a large bowl, cream together the butter and sugar, add three egg yolks and one white and beat until smooth. Add the vanilla.
In a large bowl, sift together flour, baking powder and salt. Add to the butter mixture and beat until blended.
Pour the batter into a 9" by 14" non-stick baking pan; sprinkle the pecans over the batter.
In a bowl, beat the remaining two egg whites and gradually add the brown sugar. When the eggs white mixture is stiff, spread it over batter.
Bake at 325 degrees F. for 30 to 35 minutes. Cut into squares while hot.
You should rename them "Tiger Bars"... (as in the Detroit Mud Hens, or whoever that was wearing the Tigers' uniforms last year).
