NARSI DAVID'S CHICKEN MOLE
Adapted by BumbleBeeBoogie
1 three-pound frying chicken, preferably free-range
2 tablespoons salad oil
1 small yellow onion, peeled and chopped
2 garlic cloves, peeled and minced
1 tablespoon sesame seeds
1/4 teaspoon ground cinnamon
3 tablespoons chili powder
1-1/2 cups chicken broth
2 tablespoons peanut butter
2 tablespoons golden raisins
1 ounce unsweetened chocolate
Brown the chicken parts in the oil in a large covered frying pan; remove the chicken parts and set aside.
Add the onion to the pan and saute until golden brown. Stir in the garlic, sesame seeds, cinnamon and chili powder and continue stirring over medium heat for 1 minute. Add the chicken broth and stir until all the pan residue dissolves.
Pour the pan contents into a blender or food processor with the peanut butter, raisins and chocolate. Process until the mixture becomes a smooth puree.
Return the sauce and the chicken parts (except the breasts) to the pan; simmer covered for 15 minutes. Add the chicken breasts to the pan; simmer covered 10 to 15 minutes longer until tender.
Serve with steamed rice flavored with minced Bell pepper.
