HOLIDAY PRUSURATE'

2 pounds self rising white flour
2 cups granulated white sugar
3 large eggs
1-1/2 cups milk
1 cup pecans, chopped
1 lemon, rind and juice
1 cup powdered confectioners sugar
1 cup raisins
2 jiggers whiskey
1 teaspoon double-action baking powder
oil (for frying)
2 oranges, rind and juice
2 apples, peeled and chopped
powdered confectioners sugar

In a large bowl, combine the flour and baking powder.

In a large bowl, beat the eggs, sugar and milk together. Add the flour mixture to the egg mixture; stir. Add the lemon and orange rinds and juices, stir. Fold in the apples, raisins and pecans, stir.

Heat the oil in a deep fryer according to the manufacturer's directions. Drop the batter by tablespoonfuls into the hot oil. Fry until the balls are golden brown.

Drain the balls on paper towels until cooled. Place the balls in a paper bag along with the powered sugar to coat them. Or make a glaze of powered sugar and milk and drizzle it over the cooled balls.
