RAW CRANBERRY, NUT, WHIPPED CREAM SALAD

1 12-ounce package fresh cranberries (use frozen if out of season)
2 or 3 celery stalks
2 or 3 Granny Smith or Gaia apples, peeled, cored,
½ cup chopped walnuts or pecans
White granulated sugar, to taste
1 carton whipping cream
Grind together the cranberries, celery, and apples. I use an old fashioned food grinder (a food processor works, but you have to be very careful not to over process). The color should be a rich red.
Add the sugar to taste (the amount will depend on the tartness of the apples) and the nuts. Spread the mixture into a flat baking dish and chill.
Prepare the whipped cream, sweetened to taste, shortly before serving. Spread a layer of the whipped cream over the top of the salad.
Sounds like a great holiday dish.
