CLASSIC COCA COLA CAKE

1 stick butter, at room temperature
2 cups granulated white sugar
1/2 cup vegetable oil
2 large eggs
1 cup buttermilk
2 cups all-purpose flour
4 tablespoons cocoa powder
1 teaspoon baking soda
1 teaspoon salt
1/2 cup raw walnuts, finely chopped
1-1/2 cup miniature marshmallows
1 cup Classic Coca Cola
Preheat the oven at 350 degrees F.
Butter and flour two 8 or 9-inch cake pans.
In a large electric mixer bowl, cream together the sugar and butter; add the eggs and cream until fluffy. Add the oil and buttermilk a little at a time. Mix for 2 minutes at high speed.
In another bowl, sift together the flour, cocoa powder, soda and salt. Gradually add to the butter-sugar mixture, alternating with addition of the Coca Cola, and beat on medium speed for 2 minutes. Fold in the marshmallows and walnuts. Pour the batter into the prepared cake pans.
Bake for 25 to 30 minutes, or until a toothpick inserted in the middle comes out clean. Remove the cakes from the pans and cool completely on a cake rack.
GLAZE:
1 pound of confectioner's powdered sugar
1/4 cup Classic Coca Cola
1 teaspoon vanilla extract
Add the vanilla, then the Coca Cola to the powdered sugar one tablespoon at a time to avoid the glaze becoming too thin; the entire 1/4 cup may not be needed. Beat to blend into a lump-free glaze.
Spread 1/4 of the glaze over the top of the first cooled cake layer; top with the second cake layer and spread the glaze over the top and sides of the cake.
