CURRIED CHICKEN LEGS
An original recipe by BumbleBeeBoogie
3 pounds chicken legs
vegetable oil for frying
2 medium yellow onions, peeled and chopped
2 tablespoons all-purpose flour
2 tablespoons curry powder
1 teaspoon freshly grated ginger
1/4 cup honey
1/4 cup soy sauce
2 cups canned or home made chicken stock
Heat the oil in a large skillet. Brown the chicken legs and remove them to a large casserole.
In the oil remaining in the skillet, saute the onion until limp. Then stir in the flour, (adding more oil if needed), curry powder and ginger. Mix the honey, soy sauce and broth together in a small bowl and stir it into the onion-spice mixture. Cook, stirring, over moderate heat until the sauce thickens.
Preheat the oven at 350 degrees F.
Pour the sauce over the chicken legs and bake, covered, for about one hour, until tender. Serve with steamed rice. Serves 4.
