POTATO PEANUT BUTTER CANDY

1 cup of mashed potatoes (or 1 medium sized potato, cooked)
1 cup powdered sugar (approximately, more if needed for firmness)
1 tablespoon vanilla extract
1 tablespoon maple syrup
1/2 cup butter peanut butter (crunchy or smooth)
In a bowl, combine the cooled mashed potatoes, powdered sugar, vanilla, butter and maple syrup, using your clean hands, until a dough forms. The potato must be cooled or the sugar will melt.
Roll the dough out on a sheet of waxed paper or plastic wrap to the thickness you desire, but at least 1/4 inch. Spread the peanut butter over the rolled out dough. Roll the candy up like a jelly role using the wrap to cover it. Refrigerate the roll to firm it.
When ready to serve, remove the wrap and slice the candy into bite size slices.
