CONTEST SALAD: Frozen Cranberry Salad for a Crowd

BAY WINDOW RESTAURANT'S FROZEN CRANBERRY SALAD FOR A CROWD
Adapted by BumbleBeeBoogie

3 cups nuts, chopped (pecans or walnuts or a combination of both)
6 12-ounce packages fresh or frozen cranberries, chopped in a food processor
2 16-ounce cans frozen orange juice concentrate, undiluted
2-1/4 pounds granulated white sugar
1 ounce almond extract
1-1/2 pounds Golden Delicious apples, peeled, cored and grated in food processor
10 celery ribs, finely chopped

Mix all ingredients and freeze. While the salad is freezing, stir it from time-to-time so it doesn't get frozen in chunks...

This salad holds for quite a while (it's acidic and frozen!) It keeps for at least two or three weeks, if well-wrapped so it doesn't form ice crystals.

This recipe serves 40. You can cut it down to whatever size you need. For example, to halve it, use:

1/2 cup of nuts
3 packages of cranberries
1 - 16-ounce can of orange juice concentrate
1 pound sugar
1/2-ounce almond extract
3/4 pound apples
5 celery ribs
