POOR KNIGHT'S DESSERT
An original recipe adaptation by BumbleBeeBoogie
1 cup whole milk
2 large eggs, beaten
1/4 cup granulated white sugar
1 teaspoon vanilla extract
1/2 teaspoon lemon zest, minced
1/2 teaspoon freshly grated nutmeg
6 slices stale, good quality white or egg bread, or raisin bread
1/3 cup dry white bread crumbs (Japanese Panko bread crumbs)
2 tablespoons butter
1/3 cup granulated white sugar
1/2 teaspoon ground cinnamon
In a bowl, mix together the milk, eggs, sugar, vanilla, lemon zest and nutmeg; ladle some of the mixture into a pie plate, refilling as needed. Place the bread crumbs in a second pie plate.
Place a large frying pan over medium-low heat; add the butter, but do not let it brown. Add additional butter if needed to fry all of the bread slices.
Dip the stale bread slices first in the egg mixture and then into the bread crumbs, thoroughly coating both sides. Place the bread in the frying pan and brown on both sides. Remove the cooked bread slices to serving plates and sprinkle them with a mixture of the sugar and cinnamon. Serve warm.
