So are you also saying that we should avoid using or choosing words that have e's in them for the acronym. I know I feel free to use x,y, and z words, I just try not to choose those words for the acronym.
Would the person positing the acronym change the e's or could the person actually performing change the e's if he or she wanted to or needed to based on his or her discretion?

No, I don't think it's as complicated as you suggest. Just suppose you have highlighted a word, and it's CREAMINESS.

For me, that is CR*AMIN*SS so
