BEE STING CAKE
An original recipe by BumbleBeeBoogie
2 large eggs
2/3 cup granulated white sugar
1/3 cup honey
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon double-action baking powder
1/2 cup whole milk
2 tablespoon butter
Preheat the oven at 350 degrees F. Grease and flour and 8 x 8-inch non-stick baking pan.
In a large bowl, cream together the eggs, sugar, honey, and vanilla.
In a separate bowl, sift together the flour and baking powder. Add the flour mixture to the egg mixture and whisk in to thoroughly blend.
In a saucepan, bring the milk and butter to a boil; pour the hot milk into the batter mixture and stir to blend.
Pour the batter into the prepared pan. Bake approximately 30 minutes or until a tested inserted in the middle of the cake comes out clean.
Prepare the topping:
8 tablespoons brown sugar
2 tablespoons honey
1/4 cup butter, melted
1/4 cup heavy cream
1 cup sweetened coconut flakes
1/2 cup slivered raw almonds
1 teaspoon vanilla extract
In a large bowl, mix together the topping ingredients. Spread the topping over the top of the cake while it is still warm. Place the pan under the oven's broiler and broil until the topping is bubbly and warm, watching to be sure it doesn't burn. Serves 10.
