Just a bit of information about tomorrow's bbq, Bear has been busy all day buying and preparing, and to give you some idea as to what I keep in mind when getting ready, this is my 'must do' list.
The winning secret behind a bbq is preparation and stocking your pantry with the necessary bbq essentials. The pantry contains the foods and accompaniments I use most often. I shall share some simple but essential information to ensure you know I have on-hand the basic vegies, meats, fish, condiments and a range of herb, spice & seasonings to turn my bbq into a taste of success.
Absolute Essentials: A light olive or vegetable Oil is essential for cleaning and preparing the bbq plate and grill rack.
The good old onion - cook and serve them up with sausages, burgers, steaks and salads.
Tomato Sauce, an absolute must at every bbq.
The Meat of the Menu. Tray of bbq ready steak. Spare ribs, burgers, saugsages etc. A bag of ?'bake at home' rolls that are soft and warm after only 10 minutes in the oven. Plus, a little butter and a sprinkle of garlic salt to make them extra delicious.
Utensils I use, a pastry brush for marinating and basting meats, or oiling the bbq plate. Packet of bamboo skewers, metal tongs, bbq forks and spatulas, so those eyebrows can stay where they are.
Herbs and spices. The range of herbs, spices & seasonings that can enhance the bbq are as broad and varied as the recipes that put them into use. Here are a few key herbs & spices that can always be put to good use. A versatile seasoning to go into your burger mix, like mixed herbs or all purpose seasoning. For something with a flavour kick, I sometimes use moroccan blend instead.
Thyme leaves or seafood lemon myrtle are great in marinades for shellfish and fish fillets and I use them often. Lemongrass & chilli blend, tuscan blend or cajun seasoning are all perfect dry rubs for steaks, kebabs or roast meats.
When it comes to a bbq, a marinade really makes a meal. I marinate my meats overnight. I marinate my meats, chicken and seafood with chilli and lime for a tangy, mild chilli flavour. For a blend of sweetness, with a hint of garlic and the richness of soy, I choose the balanced flavour of honey, garlic & soy.
No bbq will be complete without a solid selection of sauces, mustards and condiments. Varieties are nothing short of endless.
