Oops! You asked where, and I misread. Northwest corner of the State of New Mexico, in the USA. We call the area Four Corners, because it's the only place in the country where four states touch each other. "So what" you might ask. I don't know "so what", but honest, tourists actually travel out into the sticks to see the monument with lines on it. Hey, the state lines are no longer imaginary. They're really there.

Hey everyone. Smile I'm not sure what's been going on today as my DNS server was down (is this another ploy by MaMaIzzie to get me to do paperwork a?) - however, I got back to y'all eventually and HAPPY DAYS!

Thank goodness the Bear got sorted too - he was grizzly Mad (as I was today too with the hamsters) - but now he's back to being our Kool-Ala King of the Trees and is preparing for our BBQ Down Under tomorrow. If he thought that things have been hot lately - just wait til we turn the treehouse upside down and do a bit of Kool In The Gang - then the temperatures will rise again! Razz We will "get down under" from "up above" this side of the hemisphere and …..say Oh oh oh oh whoa! (oh c'mon - I can't hear yoooooooooooouuuuuuuuuu. Sing crew - get your backs up off the wall!) (oh - yh - I'm dancing right now!) (Bear - you're a little flushed again - steady now!) Embarrassed

Uncle Larry is back on the Marlboro Waterway and had a great hol away. GOOD FOR UNC! Well deserved. Hoping our mismi had just as good a time and enjoyed the sun and sea. Can't wait to hear her yabber to us about the trip. She snuck on briefly to check all was ship-shape - but had to depart for the shore to sort out the little Pirates and the Professor. Missed you hunni -sooooo much Very Happy

Haven't heard back from our Beautiful One - hope she's k. Stormy and Alex24… have been on the threads - hope they'll pop by soon too. VBV and WW also crewed today ((((WW-WOM)))) so thanku girls. (Thinking bout the kitty's too) Confused

BabyBlue Cool wondered over yonder deck - think he was looking for another horizon - ?'eh, what is it with him and his need to be horizontal billow deck !!!!!!!!!!! Shocked Well, the sails are blowing with the wind and we are heading for his horizons - we'll try to make good speed and see him soon. There's no rest for the wicked but we love his wicked ways here! :wink: ((xox))

Indeedee has been taking the helm tonite and welcomed a very special new crew member - how right out RH-DJ is (thanku lovely RH) ---> no ship is complete without it's resident RAT - so RogRAT we hope you will come sail with us often and enjoy the company. The crew are the very company you will find on any ship - and tho there's a nasty snake aboard Rolling Eyes - we will take good care of you. :wink:

Yeah bigred going good. It is 5 pm and just handed grandson back to daughter so I am sitting down with a chardie and enjoying watching the birds coming in for a feed, the kangaroos are grazing quite close to the house, a lot cooler weather and more headed this way - hey it's good.!

wow kangaroos grazing near the house...? deedeex..wish i could visit your part of the world!!! it hot here these days..and the roads are damn polluted...wish i could go back and have a trsyt with nature for a few days :wink:

Just a bit of information about tomorrow's bbq, Bear has been busy all day buying and preparing, and to give you some idea as to what I keep in mind when getting ready, this is my 'must do' list.

The winning secret behind a bbq is preparation and stocking your pantry with the necessary bbq essentials. The pantry contains the foods and accompaniments I use most often. I shall share some simple but essential information to ensure you know I have on-hand the basic vegies, meats, fish, condiments and a range of herb, spice & seasonings to turn my bbq into a taste of success.

Absolute Essentials: A light olive or vegetable Oil is essential for cleaning and preparing the bbq plate and grill rack.
The good old onion - cook and serve them up with sausages, burgers, steaks and salads.
Tomato Sauce, an absolute must at every bbq.

The Meat of the Menu. Tray of bbq ready steak. Spare ribs, burgers, saugsages etc. A bag of ?'bake at home' rolls that are soft and warm after only 10 minutes in the oven. Plus, a little butter and a sprinkle of garlic salt to make them extra delicious.

Utensils I use, a pastry brush for marinating and basting meats, or oiling the bbq plate. Packet of bamboo skewers, metal tongs, bbq forks and spatulas, so those eyebrows can stay where they are.
Herbs and spices. The range of herbs, spices & seasonings that can enhance the bbq are as broad and varied as the recipes that put them into use. Here are a few key herbs & spices that can always be put to good use. A versatile seasoning to go into your burger mix, like mixed herbs or all purpose seasoning. For something with a flavour kick, I sometimes use moroccan blend instead.
Thyme leaves or seafood lemon myrtle are great in marinades for shellfish and fish fillets and I use them often. Lemongrass & chilli blend, tuscan blend or cajun seasoning are all perfect dry rubs for steaks, kebabs or roast meats.
When it comes to a bbq, a marinade really makes a meal. I marinate my meats overnight. I marinate my meats, chicken and seafood with chilli and lime for a tangy, mild chilli flavour. For a blend of sweetness, with a hint of garlic and the richness of soy, I choose the balanced flavour of honey, garlic & soy.

No bbq will be complete without a solid selection of sauces, mustards and condiments. Varieties are nothing short of endless. Fortunately, we all know Bear needs his barbecue sauce and the guests won't eat anything without their tomato sauce and when it comes to experiencing new tastes, the ladies are keen as.. mustard? Wow dutchy - you've got me with the chilli - I luv anything with chilli and have a variety growing out the back. Corriander too. Can I put my order in for fish (preferably mild fishy flavour) with chilli and corriander and annnnnything else the expert chef suggests. Leave it in your capable hands. Drooling already. And yes plenty smooches for chef! :wink:

DDXX got just the fish for you, Snapper has a mild, light flavour and is good fish for people who don't like a strong fishy flavour. My recipe for you will go along these lines:
1 kg whole snapper, scaled, gutted
1 lime, thinly sliced
2 tablespoons extra-virgin olive oil
mint leaves, shredded green onions and lime wedges, to serve
Spiced dressing
4 garlic cloves, chopped
5cm piece ginger, peeled, chopped
2 small red chillies, deseeded, chopped
3 long red chillies, chopped
with corriander added to choice
1/4 cup caster sugar
1/3 cup fish sauce
2 limes, juiced
After that effort a smooch would be appreciated. :wink:

Ofcourse a bottle of a top Chardonnai will be served with it.

Okay dutchy - sounds good - just two requests - head off fish (I can't handle looking at poor little suckers eyes) and leave out the garlic. I can handle chilli with the best of them but unfortunately not tolerant to garlic. And yes big smooch coming your way. :wink:

sounds good but don't forget some veggies for me please. I am a great lover of chilli's too. Great cooking chef Dutchy! Deedee you got in quick with your order! Don't blame you! I'll bring the Pimm's, ice cold with a dash of mint, strawberries and cucumber.

I hope it's going to be warmer there than it is here. Must try to cut the lawn as it is looking very long, been putting it off for ages!

Hey good news cat was sitting on the doorstep this morning 6.30am looking cold and tired. really glad to see him. He is now curled up fast asleep after eating a dish of food. So relieved he's back.
