BUBBLE AND SQUEAK

1 medium yellow onion, peeled and chopped
1 medium head of cabbage, cored and thinly sliced
1/2 pound thick-sliced regular or peppered bacon, cut into 1-inch pieces
Instant mashed potatoes prepared as directed on the package (or home made mashed potatoes)
2 tablespoons butter
whole milk as needed
salt and freshly ground black pepper, to taste
1 tablespoon celery seeds
In a large skillet over medium heat, saute the bacon (separating the slices into individual pieces) for 2 minutes. Add the chopped cabbage and onion and continue to saute until the vegetables are tender and the bacon is browned.
Meanwhile, in another pot, prepared the instant mashed potatoes as directed on the package adding the salt, pepper, butter, celery seeds and enough milk to achieve the property consistency. NOTE: Home made mashed potatoes may be used.
Add the mashed potatoes to the cabbage mixture and mix well. Press the mixture with the back of a spoon or a spatula until it resembles a large flat pancake.
Cook the pancake over medium heat until brown on the bottom. Then carefully invert the pancake out of the pan on to a large plate. Side the pancake off the plate back into the skillet to brown the other side. The total cooking time to brown both sides is about 1/2 hour.
You will hear the cabbage and potatoes actually squeaking while it cooks, hence the name of this recipe.
