PANCIT SUISADO (FRIED NOODLES)

4 garlic cloves, peeled and minced
1 large onion, finely chopped
1 tablespoon vegetable oil
1 cup shredded cooked pork
1 cup shredded cooked chicken
1 pound Napa cabbage, finely chopped
2 carrots, coarsely grated
2 cups chicken broth
1 package rice sticks (Bijon noodles)
1 tablespoon soy sauce
2 tablespoon chopped Chinese parsley
freshly ground black pepper, to taste
Garnish: lemon wedges and sliced green onions
In a large, deep skillet, saute pan or wok over medium heat, saute the onion in the vegetable oil until soft; add the garlic and saute 1 minute longer. Add the pork, chicken, cabbage and carrots. Cook, stirring occasionally for 2 minutes. Add the chicken broth and the noodles; lower the heat and simmer for 5 minutes or until noodles are tender. Add the soy sauce and Chinese parsley, and the pepper to taste. Serve with lemon wedges and sliced green onions to garnish.
Serves 3.
ahhhhh, almost my favourite version of Pancit. Add some of the filipino version of chorizo and I'm in paradise. My friend Mercy taught a couple of us how to make this - it's always a winner at parties and potlucks.
