THE BEST OATMEAL COOKIES IN THE WORLD

1 cup butter
1 cup granulated white sugar
1 cup granulated brown sugar, firmly packed
1 large egg
1 cup salad oil
1 cup rolled oats, regular
1 cup crushed cornflakes
1/2 cup shredded coconut
1/2 cup chopped walnuts or pecans
1/3 cup dried apricots, snipped into small bits (or dried cranberries)
3-1/2 cups sifted all-purpose flour
1 teaspoon soda
1 teaspoon salt
1 teaspoon vanilla extract
Powdered or granulated sugar for finish decorating
Preheat over at 325 degrees F.
In a large bowl, cream together the butter and sugars until light and fluffy. Add the egg, mixing well; then add the salad oil, mixing well.
Add the oats, cornflakes, coconut, nuts, and apricot bits (or dried cranberries), stirring well. Then add the sifted flour, soda and salt. Mix well and form into walnut-size balls, and place on a non-stick ungreased cookie sheets. Flatten with a fork dipped in water.
Bake for 12 minutes. Allow the cookies to cool on the cookie sheets before removing. Sprinkle with granulated or powdered sugar.
Makes 8 dozen cookies.
