CARROT, APPLE & QUINCE COLESLAW

3 tablespoons fresh lemon juice
3 tablespoons quince jelly (or apple jelly)
4 large carrots, peeled and grated
2 large Granny Smith apples, peeled and grated'
1/2 cup roasted, salted cashew nuts, coarsely chopped
1/2 cup golden raisins
1 can (20 ounce) crushed pineapple
4 cups grated or finely sliced and chopped Napa cabbage
Whisk the lemon juice and jelly in a large bowl to blend. Add the carrots, apple, cashews, rainsins, pineapple and cabbage. Toss thoroughly.
6 to 8 large servings.
