I missed the bread stuff but I see reverberations that bring up Nancy Silverton's breads (grapes fermenting, dough kept on counter as a routine, really really good breads). I haven't done them but a friend cooked the whole book's worth of breads, spectacular.
Me, I do Carol Field's Italian breads, somewhat less precious but really good.
