Brussels sprouts thread

I pre-cook Brussels Sprouts in the microwave, cut them in half and brown
them in the frying pan with half olive oil, half butter, add some pine nuts and
shredded parmesan - finished!! My godson who never eats vegetables,
ate a huge bowl of them.

brussel sprouts - the simple way
----------------------------------------
- clean and wash and put a X-cut in bottom ,
- have pot of boiling water ready ,
- NO SALT YET !
- put them in the BOILING water , turn down heat and simmer 2-3 minutes ,
- have another pot/kettle of boiling water ready ,
- drain and put into fresh boiling water ,
- NOW ADD THE SALT !
- bring to boil again and let boil at medium/medium low for 5-7 minutes - best to test them by taking one out and trying ,
- when to your liking , drain them , put on platter with plenty of sweet butter etc. etc. .

it is recommended to add the salt during the second boil .

just made ten and gobbled them up ( salmon , scallops , potatoes on the side )

fresh sweet butter makes all the difference !

Actually, I have become a total convert to the sprouts. I usually cut them in half and put them cut side down in a hot skillet with olive oil maybe some garlic. Cook 'em until they are brown.

Brussels sprouts can be eaten raw or cooked.
To cook Brussels sprouts in boiling water, place them in a pot containing one or two centimetres of water and boil for about ten minutes.
To steam Brussels sprouts, place in a steamer basket and cook for 15 minutes.
Cook in microwave oven for 4 to 5 minutes (depending on size).
Overcooking will make Brussels sprouts bitter.
Serve Brussels sprouts cold with vinaigrette.
Hot Brussels sprouts can be served au gratin or with roasted almonds.
Add Brussels sprouts to soups and stews or sauté with other vegetables.


parboiling ( pre-cooking ) should remove much of the bitter/sulphur taste .

worms?

The only worms, aside from earthworms, in my gardening in california, were, sadly, in my strawberry patch. I've never been a strawberry fanatic to start with and the little black worms did the job of keeping me not.

Does this work for you, directly grilling without pre-boiling?
I love brussels sprouts, but I like them best boiled until they're just soft through, then served with some combination of butter/cheese/lemon.
I've had them charred at a number of parties, and they're hard and undercooked (in my opinion) inside and bitter on the outside, without a trace of sweetness or nuttiness. I feel like I'm missing something... or a step has been left out of the cooking process (such as boil until soft THEN grill...).
