DUTCH POTATO APPLE CASSEROLE
An original recipe by BumbleBeeBoogie

4 tablespoons butter
1 pound Yellow Fin or Yukon Gold potatoes, peeled and sliced 1/8-inch thick
optional 3 slices peppered bacon, cooked, cooled and crumbled
1/2 teaspoon salt
freshly ground black pepper, to taste
1 teaspoon poppy seeds
1 teaspoon celery seeds
2 medium Granny Smith apples, peeled, cored and sliced 1/4-inch thick
1 tablespoon fresh lemon juice
1 teaspoon freshly grated nutmeg
1/4 cup chopped flat leaf Italian parsley

Preheat the over at 425 degrees F.

Place a 2-quart baking dish in the oven while preheating; when warm, remove the baking dish and add the butter to melt and coat the dish.

Add the potatoes, salt, poppy and celery seeds and pepper to the dish, and toss to coat with the butter. Bake for 30 minutes, stirring the potatoes twice.

Meanwhile, in a bowl, combine the apple slices and the lemon juice, set aside.

Add the apples to the potatoes and toss to mix. Continue to bake until the apples are tender, about 10 minutes.

Serve hot, dusted with the grated nutmeg, and sprinkle with the optional crumbled bacon and parsley.

Serves 4.
