Real Cheese vs. Processed Cheese

Where can I find a list of real cheese? How can I tell if the cheese is real as opposed to processed? I know Cottage Cheese is high in protein. Another cheese I heard is also high in protein w/o the fat (forget what it's called could be Cottage).

Processed cheese is "real" -- that is, it's made of milk that is curdled and separated from the whey. The "process" part is that it's blended together with a lot of other cheese to make a homogeneous loaf with the desired flavor and melting characteristics...

You may not like it, and it's not a cheese that has been made for centuries, but there's not necessarily anything wrong with it.

This is not to say that there are no artificially flavored, chemically-altered, non-dairy "cheese products" out there. The stuff in an aerosol can, for instance.
