finishing off another cup of darjeeling
it was hot an hour or so ago
now, not so much

Again, I say yup!

Cube your cheese and try it in a selected oil or salt-free butter.

It's up to each person to decide how far they want to fry. You can let the cheese melt down into a puddle and then swirl the cheese oils/fats around and merge them with the oil you began with. Or, sizzle the cheese, flip to another side and sizzle another. After a time it will become to soft for turning at which point shut the heat off, remove from burner and plate it or shove a toothpick in and let it cool, then eat and enjoy. Herbs and/or spices can be added (do this after cooking).

Some folks fry cheese in a bready mixture. I frown on that as it takes away from the deliciousness.


An internet search reveals quite a few recipes and videos for frying up your favorite cheese. My frying history began accidentally.

Finally???

Had some simple whole grain toast, with hot salami, and my own mango chutney (also hot), for dinner.

Lunch had been quite a greasy seafood platter at La Perouse. We had heard this was a good restaurant, and were surprised at the plastic tables, counter service, general tackiness. We ate, and, as we walked back to the car, found that there was another entrance, to the much nicer restaurant, overlooking the water, about 10 metres up the hill! Sheeesh!

I occasionally just throw cubed hard cheese in the pan and let it melt down - never thought of frying it. Enough oils come out of most cheese when you melt them that it seems redundant. Not necessary a bad thing though Smile
