mashed butter carrots, can you tell me more?

I've long hated lame-o cooked sugary carrots, and liked raw carrots.
I've gotten into refrigerator pickling and like those carrots, whatever the pickling mode.

Still, mashed buttery carrots? It is possible I could like them.

I was cooking carrots in chicken broth from Thanksgiving. Was about to take them out and toss them, as my plan was just to add carrot flavour to the broth ... but they looked so good, I simply mashed them up with a fork, put on a dollop of butter, a hit of sea salt and black pepper ... found a kinda chewy baguette bun ... heaped on the carrots.

Tasty. Like wildly chunky carrot soup. I love carrot soup, so I suppose this wasn't too far a stretch. When I do this again, I'm going to put a tiny bit of honey and ginger on my carrot sandwich.

Ex and I did carrot soup once and I liked it well enough, but something made me avoid carrots later on.. First, that my mother made me sit at the table until done (see other posts by others) and second, I'd no clue carrots could be good. I didn't like cooked carrots, period.

I loved carrots as a baby, apparently to the point that the palms of my hands and soles of my feet turned orange.

Raw, cooked, shredded, coined, straight from the ground, I love carrots.

Carrot pancakes based on the traditional latke - passion!

I love my root vegetables.

I'm not sure yet.

Tried it once when visiting littlek's parents a decade ago. Didn't care for it then.

Saw some in the store the other week, figured it was time to try it again. It added a good flavour to the sauce. I'm not convinced how it will be on a blt or club - that is a test for later this week.

I adore porky bacon but don't buy it often.. am interested how you find the turkey stuff. Am not clear the turkey stuff is better, healthwise.
