Baked eggs. That's like a quiche without crust. In this case, in a buttered pie plate, six medium eggs (beaten) with 4 tablespoons of water, s/p, some leftover pesto potato salad w/green olives and sweet green peppers, some sweet red pepper sauce, and some previously cooked hot italian sausage. Great and for me it makes about 4 meals.
Today I bought, on a whim, three middle eastern spice packets. One is a spicy berbere combo from Ethiopia which will probably be too spicy for me (hello.... Dasha....?). The other two are Zahtar (mainly sumac, thyme and sesame) and ras-el hanout (a more complex combo).
Tonight I made some very simple big-grain couscous with, tomatoes, sauteed onion and garlic, salt and parsley - I added a tsp. of ras-el hanout. I thought at first it was too little, then while cooking that it was too much. My first taste was all cinnamon which I don't really care for. But, as I ate the dish, it really grew on me! Quite yummy. Next time I'll have to incorporate a vegie like spinach or fennel.

Chopped rapini sauteed in olive oil and a lot of garlic and four dried red chiles, some chopped green olives, a little chicken broth added for simmering, and eventually some shredded parmigiano and some bits of mild cheddar...
followed by cavatelli cooked and drained and tossed. Ahhhhhhhhh.
A lot of people would hate this as the greens are somewhat bitter. Love it..
