i don't know if you are a "connoisseur" of haggis - tongue and blood sausage would be somewhat related , i'd say - and headcheese a "pale imitation" :wink:
blood sausage is quite tasty in a fry-up .

in northern germany headcheese is (saure) SUELZE or KOPF SUELZE ,
in southern germany it's SCHWARTENMAGEN or SAUMAGEN

ours is a bit of a mild imitation - not as spicy as in germany .
