OCR scan procesing

Once in a while I am able to scan a form accurately using the OCR feature ofScanSoft's PaperPort 7.0. Mostly, however, I get the following mesage:

"Only forms that are scanned with a bit depth of 1 can be processed. Please rescan this form with a bit depth of 1 and try again."

What is "bit depth", and how do I change it?

I was able to scan one set of forms nicely, but when filling them out I found that I couldn't go back and correct an entry, or fill out a line I'd skipped. Is ScanSoft (now "Nuance") the only producer of form-scanning software? (I think there may be a good dirty joke/pun somewhere in those last words, BTW, but I've just come back from the dentist and haven't the energy to find it.)
