Open a new, blank Word document. Select Insert>Date and Time; uncheck "Update automatically", click "OK", then click "Save As ... ", save the otherwise blank document as a template (name the template something easy to remember). Use that template to open documents without updating the Time/Date Field. You also can enter a date into the Time/Date field then, place your mouse pointer in the Time/Date field, click-to-select, then simultaneously press Ctrl-Shift-F9, converting the entered data to plain text, which, once that document has been saved, will not be updated the next time you open the document.
