Hi there, the specifications for my laptop is 200pin PC2700 DDR333 SODIMM 2.5v, Sync
can i run something that is ddr2, 1.8v, pc3200, 400mhz ?
or do ram specifications all have to match up?

A couple of real easy methods.
1) Try to plug it in. If it doesn't fit your laptop won't take it. If it's an older laptop don't expect it to take DDR.
2) Look up your laptop online. If possible, find out what kind of motherboard it has. Then check the specs on that motherboard. It should be pretty specific.
Your machine vendor's website should offer upgrade info, including amount and type of RAM supported by your machine. The websites of the major RAM vendors also offer configuration profiling which will enable you to match their product to your specific application.
And yes, its good practice to ensure all RAM installed is of the same type - cuts down on lotsa headaches. At the very best case, RAM performance will be limited to the parameters of the least capable RAM installed, and significant mismatches can prevent booting, with everything else possible in between.
Also, is this sodimm type ram limited to upgrades, 2 at a time?
What I mean is, I have 2 256mb sticks in there right now. Can I just buy one 1gb stick and have 1256mb of ram?
Or would I have to buy 2 1gb sticks like RDram?
Consult you machine's vendor website for the word on that; while in most instances a single SODIMM can be employed, that's not always the case. Exceptions are not all that common, but they exist.
