Can anyone tell me what ingredients are most commonly found in marinades and dry-rubs?

1. What are some of the (most common ingredients) found in homemade marinade sauce made for baking or grilling chicken?

2. What are some of the (most common ingredients) found in homemade dry-rubs made for baking or grilling chicken?




My basic strategy is to first find out what are the most common ingredients.

After I find out what are the most common ingredients, I can then experiment by mixing and matching different ingredients.

Eventually through trial and error, I can come up with my own homemade marinade recipes and my own dry-rub recipes.

The common ingredient list will provide me with a foundation or a starting point.

It depends on the side dish.

Potatoes, pasta, rice... A bland side means a more of a flavor-able chicken. A spicy dish requires a more subdued meat.

Do you have a favourite chef at all. I would look at their recipes.

I find the hairy bikers very good. I use their pastry recipes for all my pies pasties and tarts even when I’m using another cook’s recipe and they’ve said how to make the pastry.

They have a few websites, but I think the BBC one is the best.

Add: Paprika, brown sugar, dry mustard, chili pepper flakes, soy sauce, garlic powder.
