All my work responds to market needs and noone, as far as Im concerned is giving up anything unless it eases their work , cuts expenses, or makes em more money , or all three. (Like no till farming of short season corn).
Well, the problem is that even if some farmer(s) would intentionally choose to grow beans instead of meat, that would just drive the price of beans down and meat up, which would lead some people to buy the beans, feed them to animals, and then sell the meat.
Ultimately, change takes people changing what they buy to change the demand structure of the economy. E.g. plenty of people buy dog meat in China but I don't think there's any demand for it in the US, so no one raises dogs for slaughter and there is no industry processing and packaging dog meat.
Still, even if there was a market for dog meat, I wouldn't raise dogs for slaughter or slaughter them or work with the meat. I have worked with beef, chicken, etc. in the past, even though I don't eat meat, because I needed the job; but imagine what most Americans would say if the only job they could get was butchering dogs!
