How can I install an application to an external hard drive? I want to install Quicken without having it accessible on the C drive.

When you configure the external HD the OS will assign a drive letter to it. Then, when you run the install routine for Quicken you just tell it which drive letter you want it installed on (it will prompt you for this!).
