How do you make dark chocolate?

My girlfriend(s) beats me if I don't have fresh homemade dark chocolate. I don't know how to make it, please can someone give me some advice!

You can't make chocolate. You can make homemade chocolate brownies or fudge. You can melt chocolate and make candies.

But you can't make chocolate.
