Hey, share your "food porn" - favourite dishes, interesting presentations, ideas.

Ask questions for "Mad Chef" to reply to for instance how to make the best Ceasar Salad dressing, he may take 24hrs to answer but.................the answer will get posted... Now he will get "mad" at me !!!

Food porn. Ricardo is food porn for me. The magazine is gorgeous. He is an awesome family man. His recipes never fail me. I was in a food group that had a yearlong project where you either cooked your way through a cookbook or did recipes from one chef. I was all Ricardo, all the way. However, I don't care for sweets, so others in the group had to test the desserts part of the book.

I mean

just look at the ingredient list



1 cauliflower, cut into small florets

2 stalks celery, diced

1 onion, finely chopped

2 cloves garlic, finely chopped

5 ml (1 tsp) ground cumin

5 ml (1 tsp) ground coriander

30 ml (2 tbsp) butter

1 unpeeled green apple, cored and diced

250 ml (1 cup) vegetable broth

125 ml (½ cup) sliced almonds, toasted

60 ml (¼ cup) dried apricots, diced

30 ml (2 tbsp) lemon juice

East the figs, olives, tomatoes and half the meat Smile ANYTHING green, due to a wedding coming up in November Wink I'm on a green diet, anything green... plus a wee bit of meat and no dairy.

Cauliflower !!! Yum. Love that the notation of calories and fat are included GREAT idea!

Mad Chef is cooking, Chicken Breast with Avocado and Prawn Farc ( which is a stuffing ) Asparagus Spears and Orange beurre blanc (white butter)

I may eat the chicken and Asparagus and forget the butter Wink

Ricardo's dishes are Great!

Ok to continue from my description of the last dish:---

I ATE THE BUTTER! Smile

So, the butter is a reduction of (1) orange (orange juice,) a splash of white wine and grand marnier, a teaspoon of garlic, a table spoon of sugar reduced and blended with French cold butter and add a pinch of tarragon.... YUM!

Mad Chef said with Chicken & Prawn stuffed with Avocado - Tis behind me, telling me is:-
...
You chop some chicken up and add 1/2 an Avocado, 1/2 dozen prawns, table spoon of sour cream and put into a blender with one raw egg and salt and pepper, slit a hole into the fattest part of the chicken and pipe into a chicken breast.

Roast in the oven for approximately 30 minutes, temp 220..

Re tomatoes - roasted trust tomatoes - 10 minutes add to the chicken in the pan.................Asparagus was steamed Smile

Gives a lovely acidity to the entire dish.
