There are a few, but the guy who really pays attention to local recipes and traditions is Rick Stein.
Go to youtube and search Rick Stein and you will find numerous programnes where he actually travels through various countries, talking to local people and going into their homes to watch proper local dishes being cooked. No frills cooking, and he takes copious notes throughout.
