Tripe soup

TRIPE SOUP POLISH STYLE
(flaczki):

If you don't want to cook raw tripe for up to 4 hrs, get 2-1/4 lbs. fully cooked tripe at your meat market. If it is uncut, cut the tripe into thin strips 2" - 3" long. Scald with boiling water to cover and cook 10 min., then drain. Place the tripe into 6-7 cups beef stock, add a portion of soup greens sliced into matchsticks and cook on med. until vegetables are tender. Dissolve 3 Tablespoons flour in 1 cup of the stock and return to pot, simmer briefly. Season to taste with salt, pepper, marjoram, paprika and several gratings of nutmeg. Many people like their flaczki on the spicy side, so provide some Tabasco or cayenne pepper on the side. Serve with a hearty bread.

Note: Tripe can also be served as a kind of stew over boiled potatoes or noodles. Simply decrease the amount of beef stock and thicken with a little more flour if desired.

Udon Soup

All you need are udon noodles and broth. This soup is my all-time favorite because it's healthy, filling, warm, and able to be personalised.

1 lb udon noodles
6 cups dashi stock
2 leeks
4 leaves fresh spinach, with stems
1 cooked chicken breast
6 ounces kamaboko, thinly sliced
4 shiitake mushrooms
4 eggs
salt or mirin or sake or soy sauce, to taste

Open udon noodles. Boil in water for about 5 minutes until cooked. Drain. Rinse. Set aside.

Vegetables, the basis of most soups.
Very Easy Soup - Open a carton of the ready made ones, they are so much better than they used to be; I especially like Thai chicken.

Water - somewhere along the line it seems to be included in every soup recipe.

Wine - a dollop or two does wonders to many soups!

X-MAS SOUP

1 (16 oz.) can red kidney beans (undrained)
1 (8 oz.) can tomato sauce
3 tbsp.. chili sauce
1 c. diced turkey ham
1 c. white rice
1 c. diced celery
1/2 c. diced green peppers
1 bunch chopped green onions
1 tbsp. parsley
4 chicken bouillon cubes

In large pot or Dutch oven, heat to boiling: 4 cups water, 4 chicken bouillon cubes; add rest of ingredients and cook until rice is done.

Yogurt or sour cream adds piquancy to a bland soup, and is often used in Balkan recipes.

Yakhni is a type of broth I had in India, remember it as being a bit too offal-tasting for comfort but perhaps I was unlucky. Nothing to do with yaks.

Zaire Peanut Soup
1 cup peanut butter (smooth style)
2 cups chicken bouillon
1/4 cup chopped onions
1/4 cup chopped tomatoes
red pepper (optional)

Heat bouillon and peanut butter together in a pan slowly, stirring until the peanut butter is dissolved. Simmer about 10 minutes. Add onions and tomatoes. Simmer until onions are soft. Pour into bowls and sprinkle sparingly with hot red pepper. Serves four or enough for samples for 20.
