900g (2lb) Game Bones or Carcasses
450g (1lb) Left-over Meat, shredded
2-3 Carrots, sliced

25g (1oz) Butter
2 Sticks Celery, chopped
1 Large Onion, chopped
1 Small Parsnip, chopped
Bouquet of Fresh Herbs
12 Black Peppercorns

Jalapeño and Dinosaur Kale soup

3 tbsp olive oil
1 onion, finely chopped
2 large garlic cloves minced
6 baby potatoes, diced
1/4 head cauliflower, cut into small florettes
1 tsp cumin
a dash of chili powder
16 oz vegetable broth
1/2- 1 cup water
2-3 tbsp chopped jalapeños
1 bunch dinosaur kale, ribbed and torn
salt and pepper

kimchi jjigae soup (Korea)

Ingredients :

1/2 tsp Korean sesame oil
1 cup cabbage pickle (kimchi)
1 x garlic clove crushed
1/4 lb boneless pork sliced thin
3 cup water
1 x scallion cut into 3" pieces
1 x firm Chinese soybean curd cut into 9 cubes
6 sm clams - (to 8) (optional) but
recommended

Pumpkin is a current favourite soup ingredient in the wholefood restaurants of Totnes, I have the feeling it's because it's cheap and bulky. Pea soup used to be so common it became synonymous with the terrible fogs we used to have before the Clean Air Act.
