useless activity after end of game

Why would the rule be that at the end of regulation, there be a PAT if it will not affect the outcome of the game? In yesterday's Giants game, the Eagles scored to break the tie with no time remaining. Why would the Eagles have to kick the extra point? Whether they make it or miss it, the outcome of the game was already determined. If someone got hurt on that kick, what a shame. It just makes no sense.

@dadreffan,
I wondered about that myself. Do you know the rules say the team must kick the PAT? I assumed it was the option of the Eagles, and wondered why they bothered.

@dadreffan,
If it is a rule, it's hard to imagine it doesn't have something to do with gambling.
