Isn't there some way I can scan a document such as an aplication form for example so that it is editable in the sense that I can fill it out? In addition to the Agfa scanner I installed the Readiris Image Recognition Integreated Systems and Corel Print Office disks that came with it (all are 2001 vintage).

The type of program I believe you're thinking of (which converts scans to text) is called an OCR (Optical Character Recognition) program.

Readiris Image Recognition Integreated Systems and/or Corel Print Office might have this capability, I'm not sure, but I believe the most famous OCR programs are OmniPage Pro Office and TextBridge Pro. They work quite impressively.
