what is as big as a castle, you can only see it during the day or during a full moon, but you cannot touch it.

No, you can't - it has no actual dimensions or physical presence. You can only touch the surface that a shadow falls on. And even then, nothing is actually FALLING on a surface - it is merely the absence of light.

The key to the riddle is 'during the day OR a full moon.' The full moon casts shadows.

Your answer isn't as good as mine, because the Sun isn't as big as a castle; it is so much larger than a castle as to be infinitely larger. Your answer doesn't match the scenario laid out in the riddle.

If we're talking about the perception of a castle from a distance, it indeed can appear the same size as the sun. If we're talking about the literal volume of a castle, your answer doesn't make the cut either.
