And do you have a favorite way of cooking it? A favorite recipe?

i love corn - on the cob dripping with butter and salt or boiled w/ butter in the water. I also love 'oscar' (asparagus w/ hollandaise sauce) cav...i know you'll show up here - did I say that right?

I tried an ear of roasted corn with butter at a recent fair. It was even better than boiled.

I stopped at something like nine alternatives cause I think there is a limit of poll choices. So many wonderful vegetables.... so little time.
My recent favorite is Swiss chard, which is quickly replacing spinach in my saute-with-lots-of-garlic in olive oil and add drained cooked pasta routine. At first I added ricotta too, but heh, that is a nicety. Just throw on a little parmigiano and squeeze a whole lemon over it all. Lovely. For the carbo skippers, forget the pasta.
Asparagus, oh, yeah....

But I love just about all veggies and was a semi-vegetarian for 15 years.
there was a vegitarian at my job..she recently quit. poor thing looked so sickly - and in fact, she was ALWAYS sick....guess she wasn't eating the right veggies

oh jespah, I don't know you yet, but I'm so glad you've never looked sickly. If you said you had, I would run in my bathroom and cut off all of my hair (or whats left thereof). I could not bear the thought of any member of my A2K family not well....dear heavens NO! :-)
I love just about all veggies, but this is my favorite
side dish:
2 c. ground carrots
2 c. cooked rice
8 oz grated cheddar cheese
2 eggs
1/2 c. milk
1 T. grated onion
1 T. melted butter
Salt and pepper to taste
Bake 30 min @ 350 in buttered casserole.

My favorite vegetable has always been broccoli. It is green, fluffy, and very tasty. I sometimes eat it with butter, other times, if I really feel wild and crazy, I'll sprinkle a little pepper on it.
I'm interested in that carrot and rice and onion casserole, how the cheese tastes with it...
