I am the beginning of sorrow, and the end of sickness.
You cannot express hapiness without me, yet I am in the midst of crosses.
I am always in risk, yet never in danger.
You may find me in the sun, but I am never out of darkness.

Here are the reasons why THE LETTER "S" is the answer:
The beginning of sorrow is "THE LETTER "S", the end of sickness is also THE LETTER "S" (the beginning as in the first letter).
You cannot express hapiness without THE LETTER "S", and THE LETTER "S" is in the midst of crosses (The word hapiness would be hapine, and THE LETTER "S" is in the middle, and among the word crosses).
THE LETTER "S" is always in risk, yet never in danger (THE LETTER "S" is in the word risk, but not in the word danger).
You may find THE LETTER "S" in the Sun, but THE LETTER "S" is never out out of darkness (THE LETTER "S" is in the word Sun, and darkness wouldn't be darkness without THE LETTER "S").
