Another thought: I love nectarines, particularly the white (as opposed to the yellow) ones. But they tend to be sold locally either under-ripe, like little rocks, or over-ripe, verging on going "off'. I'm wondering if the banana/apple in the bag thing might do the trick with the under-ripe ones?
